Key Responsibilities:

• Monitor USDA-FSIS regulatory activities and ensure compliance with established standards in our plant.
• Serve as the primary liaison between USDA-FSIS and plant operations.
• Utilize knife skills to prepare carcasses and parts for USDA-FSIS inspection as necessary.
• Engage in frequent communication and interaction with USDA-FSIS inspectors.

Required Qualifications:

• Strong communication skills, including proficiency in reading, writing, and speaking English.
• Acceptable attendance record as determined by the company.
• Basic knowledge of safe food handling practices.
• Understanding of employee safety protocols.
• Basic math skills for weights and measurements.
• Ability to stand for extended periods, lift up to 50 pounds, and work in a hot, humid environment.

Preferred Qualifications:

• Experience in beef processing and knife handling.
• Bi-lingual abilities (English and Spanish).
• Capacity to learn technical procedures and concepts.
• Strong understanding of USDA-FSIS requirements.
• Able to manage conflict and enforce established procedures.
