Kitchen Position Overview

What You'll Be Doing:

• Prepares all food items according to standard recipes and/or as specified on guest check.
• Visually inspects, selects and uses only food items ideal cooking, in preparation of all menu items to ensure consistency of product to the guest.
• Prepare a variety of food items including meats, poultry, seafood, vegetables, and cold foods.
• Maintain cleanliness, sanitation, and organization of assigned work areas.
• Prepares daily requisitions for supplies and food items for production.
• Use basic math skills to follow recipes and measure ingredients accurately.
• Work independently at assigned workstation to prep menu items.
• Store food properly in accordance with the Health Department and hotel standards.
• Minimize waste and maintain food cost controls.
• Review work status and check in with leaders before the end of shift.
• Checks and controls the proper storage of products, monitoring age and condition of all food items to rotate and maintain highest quality.
• Keeps all refrigeration equipment, storage and working areas clean and clutter free, complying with Health department regulations.
• Perform general cleaning tasks as assigned, using standard cleaning products.
• Keep floors dry and clean to prevent slip/fall hazards.
• Assist with additional duties such as moving supplies and cleaning unexpected spills.
• Leads by example and master's both the hot and cold food item production.

Qualifications

Culinary or Apprenticeship program preferred
Basic mathematical skills are necessary to understand recipes, measurements, requisition amounts and portion sizes.
Minimum formal education of a high school diploma
Any combination of education, training, or experience that provides the required knowledge, skills, and abilities
Prior resort and restaurant cooking experience in a high-volume kitchen or resort setting.
Additional language ability is preferred.
Expert knife skills and safety
Must be able to read recipes and follow measurement instructions accurately.
Good working knowledge of operating all kitchen equipment, i.e., stoves, ovens, broilers, kettles, steamers, etc.
Good working knowledge of broiler, saut, fry, roast, moist heat, and other advanced methods.
Heavy emphasis on stocks sauces and working saut station.
Good working knowledge of pantry fundamentals and cold food preparation techniques.
Good working knowledge of accepted standards of sanitation.
Familiarity with refrigeration equipment and safe storage practices.
Ability to read, write, speak, and understand English to follow recipes and communicate effectively.
Ability to lift and carry up to 50 lbs. on a continuous basis.
Ability to stand for long periods and work in confined spaces.
Ability to work in environments within extreme temperature ranges.
Demonstrated understanding of service standards and ability to uphold them.

Physical Requirements

Majority of daily tasks involve standing, hearing, talking, smelling, tasting, near vision, walking, grasping, and far vision. Occasionally required to climb stairs, crouch/bend/stoop, reach, push/pull, and lift or carry up to 50+ lbs. Must be able to work in confined spaces and tolerate exposure to extreme temperatures.

Compensation

The compensation for this position is $24.00/Hr. - $24.00/Hr. based on qualifications and experience.

Schedule

Varies: AM shift is 5am-1 pm or PM shift is 2pm-10pm (flexes based on business needs)
We're a 24/7/365 day operation, weekends, holidays, and the ability to move between AM and PM shifts is highly desired. We try to provide a schedule 1 week in advance as much as possible, some flexibility is important to help with high volume business needs and call outs.
